
These are a great healthy option for school lunchboxes or anytime...
Lovely and light and full of whole food goodness.
Makes about 12
1 cup organic unbleached plain flour
¾ cup wholemeal spelt flour
¼ cup organic rolled oats
¼ cup chai seeds
2 teaspoons baking powder
1 teaspoon cinnamon
½ teaspoon sea salt
¼ cup organic raw sugar
1 organic free range egg, beaten
¼ cup cold pressed macadamia nut oil
¾ cup milk
3 bananas mashed
½ cup choc chips (optional, my way of getting the kids to eat them!)
– use any good quality chocolate chips / bits
Get the kids involved – mine love to help with these!
1. Preheat oven to 180 deg C
2. Mix dry ingredients together with a spoon.
3. Mix together egg, oil and milk.
4. Add to dry ingredients until just combined.
5. Add choc chips and mashed bananas and mix in lightly – take care not to overwork or the muffins will become tough – you don’t want that!
6. Spoon into muffin tins lined with patty papers and bake for 20 mins or until golden on top.
Enjoy!
