Celebration Cake

 

Healthy Christmas CakeCelebration Cake

 

This is a gorgeous moist Celebration Cake.

See gluten free option below - lots of goodness and tastes yum!

 

what you need -
1 ½ cups raisins.
½ cup figs & dates ea, chopped
¼ cup currants
½ cup dried pears
2/3 cup Macadamia Oil
1 cup honey
4 eggs
3 cups wholemeal spelt flour (substitute for 50:50 rice and buckwheat for gluten free)
¼ tsp bi-carb
1 tsp cinnamon
½ tsp star annaise & cloves ea, ground
1 cup raw whole almonds
1 cup water
zest of 1 orange & lemon

how -
1. Soak all of the fruit overnight in filtered water - you could add brandy / rum here if desired :)
2. Preheat oven to 140 deg.
3. Beat oil and until creamy, add eggs one by one.
4. Mix all dry ingredients together with drained fruit mixture & nuts.
5. Add the zest and egg mixture - stir well to combine.
6. Pour into lined 20cm cake tin.
7.  Bake for 2 hours or until cooked. Test with a skewer.
