Healthy Chocolate Cake
Made just the way Grandma used to with real healthy ingredients and nothing artificial!
It is an easy, simple, yummy recipe that kids love – a great lunchbox favourite or evening dessert –
just dress it up with some berry coulis – made from scratch of course!
2/3 cup unbleached organic spelt flour
2/3 cup organic unbleached plain flour
2/3 cup organic raw sugar (or muscovado sugar)
¼ cup chia seeds (optional)
¼ cup lsa mix (optional)
¼ cup organic unsweetend cocoa powder
100g organic chocolate cut into small chips / pieces (optional)
2 tsp baking powder
½ tsp bicarb soda
½ tsp salt (preferable Himalayan pink)
¾ cup organic milk (or soy or rice milk)
¼ cup cold pressed macadamia oil
1 tsp vanilla essence
1 organic free-range egg

Preheat oven to 180 deg (160 for fan forced)

In a large mixing bowl combine all the dry ingredients

In another bowls combine all the wet ingredients. Add to the dry ingredients and beat until just combined.

Pour into a large loaf or round lined cake tin and bake for 30 - 40 mins.

Cool in cake tin
- You can either just dust with icing sugar to serve or else ice.
- I love to just dust with icing sugar and then serve with real vanilla bean ice cream and a raspberry coulis for a decadent dessert.
Rasperry Coulis
- Add 1cup of frozen / fresh berries of your choice to a blender with ¼ cup of real icing sugar (not icing mixture).
- Blend until smooth. You can freeze this in little bags and thaw whenever you need to....yum.
