
San Choi Bow
This recipe is a wonderful source of protein
and essential nutrients.
It is quick and yummy recipe that kids love
to fold up and eat!
400g chicken mince
1 cup quinoa
1 small tin of water chestnuts, drained
1 small knob of ginger, minced
1 med chilli (optional)
½ cup (100ml) tamari (gluten free soy sauce)
¼ cup pure maple syrup
2 tbsp macadamia nut oil
1 cup bean sprouts
2 tbsp corn flour
8 iceberg lettuce cups
Coriander sprigs, chopped
Carrot strips to garnish
- Cover the quinoa with water and simmer until all water has been absorbed with the lid on. It should be soft now and ready for use.
- Heat oil in wok and cook the mince, water chestnuts, ginger until browned, stirring constantly to break up any lumps.
- Add tamari and maple syrup and cook for a further few minutes.
- Mix corn flour with a little water and add a little at a time to mince to thicken.
- Check seasoning and adjust to taste.
- Add bean sprouts just before serving and stir though. Garnish with coriander and carrot.
- Spoon into washed and trimmed lettuce cups at the table – kids love to do this. Fold over and eat!
